Job Summary
The Executive Chef will oversee kitchen operations for a fine dining restaurant, fast-casual cafe, and internal/external catering at the Cleveland Museum of Art. Managing an annual business volume of $6-7 million, with catering accounting for nearly half, this role requires flexible hours, including weekends and evenings. Catering and prep may be required on Mondays. The position offers a dynamic, entrepreneurial environment for a seasoned culinary leader.
Key Responsibilities:
Plan and modify menus following established guidelines, ensuring consistent quality and presentation
Use standardized recipes and portioning standards; complete production and waste logs
Train kitchen staff on food preparation, safe handling, equipment use, and sanitation in line with company and regulatory standards
Establish and maintain cleaning and maintenance schedules for all kitchen areas and equipment
Maintain inventory control for food and supplies, ensuring availability while staying within budget
Make decisions on leftover food usage per company guidelines
Ensure compliance with health, safety, and sanitation regulations through audits and inspections
Follow safety policies and participate in client satisfaction programs
Attend departmental meetings and staff development programs
Preferred Qualifications:
A.S. in Culinary Arts or equivalent experience
5+ years in culinary/kitchen management, with emphasis on high-volume, complex foodservice operations
Experience in fine dining, VIP catering, and fast-casual service
Hands-on chef experience and strong knowledge of food trends, production, sanitation, food cost control, and presentation
Experience with menu costing, menu development, and operational management including budgeting and inventory
Proficiency in Microsoft Office (Word, Excel, PowerPoint, Outlook)
ServSafe certification is highly desirable
Flexible availability, especially for weekends and evening catering events
